Thermostable Galactosidase (EC 3.2.1.23)
The recombinant
thermostable galactosidase EC 3.2.1.23 (pyrococcus fruriosus) was
prepared and purified from Escherichia coli expression system. b-Galactosidase
which
hydrolyses the b1-4 galactosidic linkages was widely used for hydrolysis of
lactose in
dairy products and also as a tool in organic chemistry. The advantage of
thermostable
galactosidase is its thermostability (>85 centigrade) and resistance to
organic solvents.
Optimum temperature: 85-95 centigrade
Specific activity: 5,000U/mg
